28 INNER-WEST WEEKLY, Thursday, October 30, 2008 MB Healthy burger MIDDLE EASTERN LAMB BURGER Recipe: DONNA BOYLE. Photography: MARK O'MEARA. Ingredients: Serves: 4. 440g can beetroot slices, drained; 1/2 cup reduced-fat plain yoghurt; 1 garlic clove, peeled, quartered; 500g lean lamb mince; 1 teaspoon ground cumin; 1 teaspoon ground coriander; 1/2 red onion, finely chopped; 1 tablespoon chopped fresh flat-leaf parsley leaves; 2 teaspoons olive oil; 50g mesclun salad mix; 4 small Turkish bread rolls, halved, toasted. Method: Process beetroot, yoghurt and garlic until smooth. Set aside. Place lamb, cumin, coriander, onion and parsley in a large bowl. Season with salt and pepper. Stir to combine. Shape mixture into four 2cm-thick patties. Heat oil in a large, non-stick frying pan over medium-high heat. Cook patties for 5 to 7 minutes each side or until golden and cooked through.
