Can you please give me some buying and storage tips? You can tell fresh seafood simply by looking at it. Avoid seafood that is dull in colour or with edges that appear slightly grey -- this is a sign that it's past its best. All seafood should be refrigerated or frozen soon after purchase, and the sooner it's consumed, the better. If there is some distance between the point of purchase and your home, make sure you pack a cooler bag or esky so the seafood remains at its freshest. Place in the coldest part of the fridge in a bowl of ice (if storing prawns) or flat on a tray, covered with a damp towel, if storing oysters and scallops. To defrost seafood, thaw in the fridge at least 24 hours before you wish to eat it. Don't let frozen seafood defrost and then be re- turned to the freezer.
