Ingredients: Serves: 8. 11/2 tablespoons olive oil; 3 rashers middle bacon, rind removed, finely chopped; 1 long red chilli, deseeded, finely chopped; 2 green onions, thinly sliced; 1 tablespoon red wine vinegar; 16 large oysters. Method: Heat 2 teaspoons oil in a frying pan over medium- high heat. Add bacon. Cook, stirring, for 5 to 7 minutes or until crisp. Remove from heat. Stand for 2 minutes. Add chilli, onion, vinegar and remaining oil. Stir to combine. Place oysters on platter. Top with bacon mixture. Serve. If there is some distance between the point of purchase and your home, make sure you pack a cooler bag or esky so the seafood remains at its freshest. Place in the coldest part of the fridge in a bowl of ice (if storing prawns) or flat on a tray, covered with a damp towel, if storing oysters and scallops. To defrost seafood, thaw in the fridge at least 24 hours before you wish to eat it. Don't let frozen seafood defrost and then be re- turned to the freezer.
