Finely grate rind of 1 orange. Peel and segment oranges (see note). Heat a large, non-stick frying pan over medium heat. Add butter and sugar. Cook, stirring, for 2 to 3 minutes or until bubbling. Add grated rind and juice. Simmer for 1 minute. Stir in orange segments. Fold crepes into quarters. Add to orange mixture. Spoon sauce over creˆ pes. Simmer for 1 to 2 minutes or until heated through. Arrange crepes on plates. Drizzle with sauce. Serve. To segment oranges, remove peel and white pith. This season's hass avocados are deliciously creamy and luscious. The great thing about the Australian hass avocado is that its pebbly skin turns from green to nearly black when it's ripe.
