Picture: SIMON CHILLINGWORTH ~P0646215 Glasshouse brings Lana Lamlight warmth and SUNLIGHT pours into the Glasshouse Cafe Bar but that's not the only thing warming us up on this cold winter afternoon. A deftly brewed coffee and a cinnamon-topped chai tea entice us in from the 16C breeze rolling along Illawarra Rd. Owner Jim Camaras opened the Marrickville eatery in late-2007, choosing to set up in the inner- city suburb after a stint in the eastern suburbs and the CBD. He handpicked an experienced team with barista Eddie Veneri pouring velvety cups of coffee. Veneri used to be a barista coach at Grinders Coffee so he churns out ristrettos, cappucinos and hot chocolates with equal aplomb. In the kitchen, Camaras poached the chef from the Orient Hotel in the Rocks to handle the pans at the Glasshouse. ''Chef Satria brings with him an East Asian flavour,'' Camaras said. For the menu, Camaras had one thing in mind: Keep It Simple (KIS). ''Every chef will tell you the KIS menu is the best menu because it frees up the chef for the specials,'' Camaras said. The lunch and breakfast menus have 12 staple items each, complemented by three daily specials. With the winter chill, the menu features lamb cutlets with roast vegetables, stuffed chicken breast with potatoes and balmain bug risotto. The bugs are moist with a crisp grilled edge and a bounce in the flesh that makes them a perfect match for the soft arborio rice. The chicken breast is hearty winter fare with rustic cubes of roast potatoes and a light cream sauce. The cafe serves about 3000 people every week, getting through more than 50kg of coffee beans. For Camaras, the pace of Marrickville has been a welcome change. ''I'm learning more and more about the area,'' he said. ''We have more time to spend with the customers and in the suburbs you have to take the time to learn everyone's name. ''That's the intimacy of the service.''
