Ask Kim I'm becoming more health con- scious and I know fish is really good for you. Can you give me some tips on how to prepare it? When choosing fresh whole fish, look for ones with bright eyes and firm flesh. Fish in its prime should have no overly strong smells, brown spots or discolouration. Keep fresh fish in the fridge for no longer than two days or freeze for up to two to three months. If you're going to marinate fish, do so for 30 minutes only. The acids in many marinades break down the fish's delicate protein. When grilling, choose firmer fish such as salmon, tuna, swordfish or blue-eye. Don't cover with a lid while grilling. Trapped smoke will season the flesh. Steam fish in a bamboo steamer. You can also cook fish in a stir-fry or soup - simply cut boneless, skinless fish into large pieces.
