28 INNER-WEST WEEKLY, Thursday, July 31, 2008 Balkan bangers BALKAN SAUSAGES WITH RICE PILAF Serves: 4 3 garlic cloves, quartered; 10 green onions, sliced; 750g lean beef mince; 1 teaspoon cayenne pepper; 1 egg, lightly beaten; 1 1/4 cups basmati rice, rinsed; 2 1/2 cups chicken stock; 1/3 cup slivered almonds, toasted; 1/2 cup fresh basil leaves, shredded; olive oil cooking spray. red pepper tapenade, to serve. Method: Line a baking tray with baking paper. Place garlic and half the onion in a food processor. Process until finely chopped. Add mince. Process until smooth. Combine mince mixture, cayenne pepper and egg in a large bowl. Season with salt and pepper. Using damp hands, shape mixture into 12 sausages. Place on prepared tray. Cover with plastic wrap. Refrigerate for 30 minutes or until firm. Place rice, stock and remaining onion in a saucepan. Bring to the boil over medium heat, stirring occasionally. Reduce heat to low. Cover. Cook for 15 minutes or until rice is tender. Remove from heat. Stand, covered, for 5 minutes. Stir through almonds and basil. Spray a barbecue plate or chargrill with oil. Heat over medium-high heat. Cook sausages for 8 to 10 minutes or until cooked through. Serve with rice mixture and red pepper tapenade. Simply combine the ingredients, roll the mince mixture into sausage shapes using your hands, then refrigerate for at least 30 minutes. You don't have to stick to beef mince when making sausages. The tastiest bangers are often made from a combination of minces, such as veal and pork. You can also use chicken breast mince or lean lamb mince. Add a tasty twist to the traditional sausage by adding fresh herbs such as rosemary, sage or basil. When making fresh sausages, be aware they don't contain preserv- atives like the store-bought var- iety, so they should be cooked and eaten within two to three days of being made. WHETHER you're after a mid- morning coffee, an afternoon snack or a filling meal, The Cove at Drummoyne, is a beautiful place for it. Overlooking the Parramatta River, the views from the former caretaker's cottage veranda are stunning. The Cove owner Ben Quinlan said the restaurant was community-based and a favourite for locals. ''We're here for a lot of the bay walkers; there's the pool, the gym and the rowing club and we're here for those people,'' he said. The Cove aims to change its menu monthly. ''We want the menu to be as broad as possible,'' Mr Quinlan said. ''You can stop in for a light snack or bring someone in for a restaurant meal.'' The winter menu includes soups and hearty warm meals. My dining partner and I sampled some of The Cove's popular dishes. I had the ocean trout fillet with vegetable ragu and salsa verde ($19.50) and my friend enjoyed risotto with prawn, diced tomato, corn, white wine and parmesan ($19.50). Both were tantalising to the very last bite. We enjoyed the view, the warmth from the heaters and the relaxed cafe atmosphere as we sipped delicious coffee and enjoyed pistachio biscotti. Breakfasts include salmon benedict ($15.50) and freshly baked muffins ($4.80), and desserts include portuguese tart ($3) or blackberry cheesecake with creme anglaise ($7.50).
