Dishes such as the taro ring are truly unique. DON Heng King Crab Century is no regular Chinese restaurant. It is the leading restaurant specialising in seafood in the Inner West, and it's all thanks to the man known as ''Crab man''. With 30 years' hospitality experience, Don Heng arrived in Australia from Vietnam in 1978, worked in Chinatown then left for Hong Kong in 1986, working across Asia. He brought his expertise back to Australia in 1997 and since then has owned and operated restaurants throughout Sydney and more recently in Wests Ashfield Leagues Club. His speciality dishes are based around fresh seafood, particularly crab. The crustacean is cooked in 28 styles. Other customer favourites are pork ribs and the taro ring. The dry stir-fried pork ribs in red lady style ($16.80) are marinated in a succulent honey and chilli sauce and can be shared by up to four people. ''The great thing about the foods are they can be eaten by many people for a fraction of the price,'' Mr Heng said. His original food can't be found in recipe books. In fact Mr Heng says no one else can do it. Not even the chefs in Chinatown can whip up the foods his staff can, especially the deep-fried taro ring in supreme vegetables, $20.80. ''This is our special dish which only we have the recipe for and customers really love it,'' he said. Mr Heng likes to describe his customers as high class. ''They know what Chinese foods I can do and they all appreciate it, and that is why I was invited to open my restaurant at this club,'' Mr Heng said. This is true. When I tasted the taro ring it was nothing like I had eaten before. Mr Heng truly takes his time to ensure his foods are unique. The popular King Crab restaurant has customers lining up outside the door every weekend for dinner. And the beautifully designed function room which overlooks the city is usually booked weeks in advance. You can get a glimpse of what you're about to eat with the eight tanks filled with crab, lobster and fish.
